  • 4 pcs 4 pcs Chorizo (sliced diagonally)

  • 4 cups 740 g Rice (Cold or Leftover)

  • 1 medium 1 medium Red Onion (peeled and minced)

  • 5 cloves 5 cloves Garlic (peeled and minced)

  • 2 tbsp 12 g Spring Onion (finely chopped)

  • 1 small 1 small Carrot (peeled and minced)

  • 1/4 tsp 0.45 g Cayenne Pepper

  • Salt and Pepper to Taste

  • 2 tbsp 29.57 ml Cooking Oil

Directions

  • Begin by heating your cooking oil in a large skillet or wok. Sauté the minced garlic and onion until they are soft and fragrant.
  • Add the sliced chorizo until fully cooked and add carrots to the pan, sautéing for a minute.
  • Add your leftover cold rice to the pan and mix well. Ensure all the grains are well coated with the oils and seasonings from the chorizo.
  • Season your dish with salt, and pepper. Add cayenne pepper if you prefer a bit of a kick.
  • Lastly, add the finely chopped spring onions and mix well. Cook for another minute or two to let all the flavors combine.
  • Serve your Chorizo Fried Rice hot, and enjoy this easy meal straight from your Filipino kitchen!
