  • Spreads: jam, honey, Nutella, etc.
  • Nuts and seeds: almond butter, peanut butter, sunflower seeds, etc.
  • Savory toppings: bacon, sausage, avocado, tomato, etc.

For the bread, I like to use artisan sourdough. But you can really use any type of bread that you like. If you want to make a healthier version, you can even use a light rye or spelt bread.

Ingredients

  • 250 grams 250 Cream Cheese

  • 2 tbsp 7.6 g Fresh Flat-leaf Parsley

  • 1 tsp 0.8 g Fresh Thyme

  • 1/2 tbsp 7.39 ml Lemon Juice

  • 4 slices 4 slices Artisan Bread

  • 4 tbsp 56.8 g Unsalted Butter

  • 2 tbsp 29.57 ml Olive Oil

  • 2 medium 2 medium Eggs (for Fried)

  • 2 medium 2 medium Eggs (for Scrambled)

  • 1 tsp 2 g Chili Flakes

  • 2 tbsp 17 g Grated Cheddar Cheese

Directions

  • Beat cream cheese until smooth.
  • Throw in some fresh thyme, flat-leaf parsley, and lemon juice. Set aside.
  • Butter both sides of the bread slice.
  • Heat a large non-stick pan or skillet over medium-low.
  • Toast sandwiches until golden brown, about 3 minutes per side.
  • Scrambled Egg
  • In a small bowl, crack the eggs. Use a fork or whisk to beat until foamy.
  • Add butter or olive oil to the pan, and when it starts to sizzle, add the egg mixture.
  • Cook over medium heat, stirring and moving eggs from the center and from the sides, until the eggs are thick and creamy.
  • Place scrambled eggs on the toast and spread with cream cheese mixture.
  • Grate some cheddar cheese for topping. Enjoy!
  • Fried Eggs
  • Heat the oil in a non-stick pan or skillet over low heat until slightly shimmering.
  • Crack eggs into the pan, sprinkle with salt, and cook for about 3 minutes, or until the whites are just set on top but the yolks are still runny.
  • Slide the eggs from the pan onto a piece of toast with a mixture of cream cheese.
  • Sprinkle with chili flakes. Enjoy!

  • Lower the heat to have more control over how runny the egg will be.
