Ingredients

  • 4 4 pcs Eggplant

  • 2-3 2-3 pcs Green Mango

  • 4 4 pcs Tomato

  • 1 1 pc Red Onion

  • 2 2 pcs Salted Egg

  • 1 tbsp 15 g Bagoong (Filipino Shrimp Paste)

  • Chili Flakes

  • Ground Black Pepper

  • Calamansi or Lemon Juice

Directions

  • Prick eggplant with a knife or the tines of a fork.
  • Get the grill ready or turn on your gas stove. Roast the eggplant and tomato until the skin is evenly blackened and the eggplant is just starting to soften.
  • Remove from the grill and let it cool. Once eggplants have cooled, carefully peel them, taking off as much skin as you can.
  • Stack grilled eggplant, mangos, tomatoes, red onion, bagoong, and salted eggs on a serving platte
  • Drizzle with lemon or calamansi juice and season with pepper and chili flakes to taste.
  • Mix them up well. Enjoy!
