Ingredients

  • 1 kilogram 1 kilogram Pork Belly (Sliced)

  • 4 tbsp 59.15 ml Calamansi Juice

  • 1 1/2 cups 354.88 ml Soy Sauce

  • 2 tbsp 29.57 ml Oyster Sauce

  • 3 tbsp 44.36 ml Coconut or Brown Sugar

  • 1 head 1 head Garlic

  • 4 pcs 4 pcs Chili (Labuyo)

  • 1 tbsp 6 g Ground Black Pepper

  • Basting Sauce
  • 1/2 cup 118.29 ml Banana Ketchup

  • 1/4 cup 59.15 ml Canola Oil

  • Marinade Mixture

Directions

  • Mix all the ingredients for the marinade in a bowl.
  • Marinate the pork belly slices and refrigerate for 3 to 6 hours.
  • Take the pork out of the marinade and save about a cup of the liquid.
  • To make the basting sauce, put all the ingredients in a bowl and mix them together.
  • Get the charcoal and grill ready. Put the pork on the grill and let it cook.
  • When the pork starts to lose its pink color, keep basting it with sauce. Keep grilling for another 4 to 5 minutes on each side, or until the pork is fully cooked.
  • Move the grilled liempo to a dish for serving. Let it rest for about 3 minutes before cutting them into pieces to serve.
  • Serve it with hot steaming rice and spiced vinegar. Enjoy!
