Ingredients

  • 1 cup 115 g Kimchi (finely chopped)

  • 1/2 cup 62.5 g All-Purpose Flour

  • 1/2 cup 64 g Cornstarch or Potatostarch

  • 1/4 cup 59.15 ml Kimchi Brine (liquid)

  • 100 ml 100 ml Water

  • 1 stalk 1 stalk Onion Leeks (chopped)

  • 1 medium 1 medium White Onion (chopped)

  • Salt and Pepper to Taste

  • Canola Oil for Frying

Directions

  • To make the pancake batter, put the flour, starch, kimchi brine, and water in a bowl and whisk them together until they are smooth.
  • Add salt and pepper to taste.
  • Mix in the kimchi, onion, and leeks into the batter.
  • Heat a pan or skillet.
    Put cooking oil into the pan.
    Make sure the oil is spread all over the pan.
  • Pour the batter into the pan and use a ladle or spoon to spread it out evenly.
  • Cook for about 2 to 3 minutes, or until the bottom is golden brown.
  • Once the bottom is done, you should be able to easily move the pancake around the pan. Turn the pancake over and put more oil around the edges.
  • Press the pancake down a few times with the spatula to make it crisp.
  • When both sides are done, cut it into pieces that are easy to eat. Serve right away. Enjoy!
