Ingredients

  • 1 kilogram 1 kilogram Pork Liempo (cut into bite size pieces)

  • 1 Large 1 Large Onion (Sliced)

  • 8 cloves 8 cloves Garlic

  • 4 pcs 4 pcs Tomato (diced)

  • 1/2 cup 118.29 ml Sauteed Shrimp Paste (barrio fiesta or any brand)

  • 1 tbsp 14.79 ml Sugar

  • 3 pcs 3 Eggplant (trimmed, sliced in half lengthwise)

  • 2 pcs 2 pcs Green Chili (sliced)

  • 1 pc 1 pc Red Chili (Sliced)

  • Pepper to Taste

Directions

  • Heat oil in a pot with a heavy bottom over medium heat. Cook pork until it turns a little brown and the fat comes out. Set aside.
  • Fry the eggplant in the same pot until it is soft and has a light brown color. Set aside.
  • Add onions, garlic, and tomatoes and cook them until they get soft.
  • Add the shrimp paste and sugar, season with pepper, and cook for about a minute, stirring occasionally.
  • Into the pot, put the pork. Add enough water to cover the meat. Let it boil.
  • Turn down the heat, cover, and let it simmer until the pork is soft enough to cut with a fork and the sauce has thickened.
    Note: add water or pork stock as needed. 
  • Put in the eggplant and the chilies. Stir in order to mix. Cook for 2 minutes with the cover on.
  • Serve hot with steamed rice. Enjoy!
