‘Giniling’ in Pork Giniling Recipe

The term ‘Giniling’ in the Filipino language translates to ‘minced’ or ‘ground’ in English. Therefore, when we talk about ‘Pork Giniling,’ we refer to a dish made with ground pork as the main ingredient. Giniling can be considered the Filipino version of American ground meat dishes, like sloppy joes or chili. In the Philippines, ground meat (pork, beef, or chicken) is often cooked with various ingredients such as tomatoes, potatoes, carrots, and bell peppers. This dish is then simmered in tomato sauce or banana ketchup, making it a savory, slightly sweet, and hearty meal.

Ingredients

  • 600 grams 600 grams Ground Pork

  • 1 medium 1 medium Carrot

  • 1 large 1 large Potato

  • 2 large 2 large Tomato

  • 1 medium 1 medium Red Onion

  • 4 cloves 4 cloves Garlic

  • 1 medium 1 medium Red Bell Pepper

  • 1 small 1 small Green Bell Pepper

  • 2 tbsp 30 g Raisins

  • 1 small 1 small Greenpeas (canned)

  • 1 small 1 small Liver Spread (canned)

  • 1/3 cup 37.29 g Grated Cheese

  • 1/2 tbsp 4 g Annatto Seeds

  • 2 tbsp 32 g Tomato Paste

  • 12 pcs 12 pcs Boiled Quail Eggs

  • Salt and Pepper to taste

  • Cooking Oil

Directions

  • Pour oil into a pan and cook the carrots and potatoes until tender. After cooking, set them aside for later use.
  • In the remaining oil, add the annatto seeds. Cook them until their color is extracted into the oil. Remove and discard the seeds once the oil is well-infused with the color.
  • Using the now annatto-infused oil, proceed by sautéing the garlic and onions until they become soft and emit a fragrant aroma. Then, incorporate the freshly chopped tomatoes into the mixture, letting them soften.
  • After this, add the ground pork to the pan, cooking it until it becomes light brown
  • Next, reintroduce the pre-cooked carrots and potatoes and add bell peppers, raisins, and green peas.
  • Season the mixture with salt and pepper, then simmer for 15-20 minutes. This simmering period allows the vegetables to cook thoroughly and the flavors to merge.
  • After this simmering period, it’s time to add the liver spread and the tomato paste. Add these along with the cheese and boiled quail eggs. Let the entire mixture simmer for another 5 minutes.
  • For the final touch, adjust the seasoning according to your personal preference. Your Pork Giniling with Quail Eggs is now ready to be savored!
