Ingredients

  • 1 kilogram 1 kilogram Pork Spare Ribs

  • 1 kilogram 1 kilogram Pumpkin (cut in into small or medium chunks, with or without skin)

  • 9 cups 2129.29 ml Water

  • 2 large 2 large White Onion (quartered)

  • 1 cup 1 Onion Leeks (cut in 2 inches length)

  • 4 tbsp 24 g Spring Onion (finely chopped)

  • 6 tbsp 108 g Fish Sauce

  • Pepper to Taste

Directions

  • Soak the pork ribs in water for about 20 minutes. Then wash them well.
  • Put pork ribs and water in a pot, turn the heat up to High, and bring to a boil.
  • Remove any scum that comes to the top.
  • Add the leeks and onion. Cover the lid and turn the heat to Low.
  • Simmer 35 – 40 minutes or until pork is tender.
  • Add the pumpkin, fish sauce, pepper, and bring back to a simmer. Cook until the pumpkin is almost done, about 15 to 20 minutes.
  • Add spring onions.
  • Serve with steamed rice, fish sauce, calamansi or lime, and chili on the side. Enjoy!
