What is Skinless Longganisa?

To begin with, skinless Longganisa refers to a native Filipino sausage devoid of the traditional casing – hence the term ‘skinless.’ It is a delicious medley of ground pork, garlic, and an array of spices often served as a part of a hearty Filipino breakfast called Longsilog. This classic meal combines the savory taste of Longganisa with garlic fried rice (sinangag na kanin) and sunny-side-up eggs or itlog na maalat (salted egg). The sweetness of the sugar, the saltiness of the soy and Worcestershire sauces, and the heat from Spanish paprika and mixed peppercorns all create a unique burst of flavor.

Tips and Alternatives

The key to a great sausage is the balance of lean meat and fat. Using ground pork with a good amount of fat marbling helps keep the sausages tender and juicy. Cornstarch is added as a tenderizer, ensuring that the sausages stay moist.

Although traditionally enjoyed for breakfast, skinless Longganisa is versatile and can be incorporated into other meals of the day. Add it to your pasta for a Filipino twist, or use it as a pizza topping for a burst of sweet and savory flavors!

You can substitute pork with ground chicken or beef if you don’t eat pork. Remember, cooking is all about experimenting!
