This homemade skinless Longganisa recipe brings the authentic Filipino breakfast experience to your kitchen. It’s a flavorful pork sausage made with a perfect blend of spices, offering a sweet and savory treat that you’ll love!

  • 500 grams 500 grams Ground Pork

  • 12 cloves 12 cloves Garlic (peeled and minced)

  • 1 tsp 4.93 g Spanish Paprika

  • 1 tsp 4 g Annatto Powder

  • 2 tsp 12 g Sea Salt

  • 2 tsp 8.8 g Ground Mixed Peppercorn

  • 2 tbsp 16 g Cornstarch

  • 2 tbsp 29.57 ml Soy Sauce

  • 2 tbsp 29.57 ml Worcestershire Sauce

  • 10 tbsp 120 g Coco Sugar or Brown Sugar

  • 3 tbsp 44.36 ml Water

  • Oil for frying

  • Wax Paper or Ice Candy Plastic Bag for Wrapping

Directions

  • In a large bowl, combine all the ingredients and mix until well incorporated. This forms your sausage mixture.
  • Let it rest for 30 minutes to allow the flavors to mingle.
  • Next, scoop about 1/8 cup of the pork mixture onto an ice candy plastic bag or wax paper. Form it into a log, using a toothpick to pop out any air bubbles.
  • Repeat until all the mixture is shaped and wrapped. Freeze these homemade sausages to use at your convenience.
  • When you’re ready to cook, soak the sausage in water and cut the end of the plastic or remove the wax paper.
  • Arrange the sausages in a wide pan over medium heat. Add enough water and cook until most water evaporates.
  • Add oil and cook, turning as needed, until the sausages are lightly browned and caramelized.
  • Serve hot with garlic fried rice and sunny-side-up eggs, and relish your homemade skinless Longganisa!
