Tips for Snow Cheesecake Success

To ensure your Cotton Soft Snow Cheesecake turns out perfect every time, follow these essential tips:

  1. Room Temperature Ingredients: Ensure your eggs, butter, and cream cheese are at room temperature before starting. This helps achieve a smoother, more homogeneous batter and frosting.
  2. Gentle Folding: When incorporating the whipped egg whites into the flour mixture, gently fold them in to preserve the airiness of the cake. Overmixing can result in a denser, less fluffy texture.
  3. Baking Time: Keep an eye on the cake during baking, as oven temperatures vary. Start checking for doneness around the 30-minute mark to avoid overbaking.
  4. Cooling: Allow the chiffon cake to cool completely before applying the frosting. This prevents the frosting from melting and ensures a smooth, even layer.
  5. Chilling: Take the overnight refrigeration step! This allows the flavors to meld together, resulting in a more satisfying Snow Cheesecake experience.

While the classic Cotton Soft Snow Cheesecake is a winner, you can always experiment with different flavors and toppings to make it your own. Here are some ideas to get you started:

  • Citrus Twist: Add lemon or orange zest to the chiffon cake batter for a subtle, refreshing citrus flavor.
  • Fruity Toppings: Top the cheesecake with fresh berries, sliced peaches, or a fruit compote for added color and natural sweetness.
  • Chocolate Lovers: Add cocoa powder to the cake batter or use a chocolate ganache instead of the snow frosting for a decadent twist.
  • Nutty Crunch: Sprinkle some crushed nuts, such as almonds, pecans, or walnuts, on top of the frosting for added texture and flavor.

  • 1/3 cup 66 g White Sugar

  • Ingredients for Snow Frosting:
  • 1/2 cup 113.5 g Softened Unsalted Butter

  • 1/2 cup 113.5 g Cream Cheese

  • 1/4 cup 76.5 g Condensed Milk

  • Toppings: Cheddar Cheese (Grated)

Directions

  • Chiffon Cake:
  • Preheat your oven to 160ºC (320ºF).
  • Whisk the egg yolks and 1/4 cup sugar in a large mixing bowl until they’re creamy and light in color.
  • Mix the oil, milk, and vanilla into the egg yolk mixture.

  • In a separate bowl, beat the egg whites with the cream of tartar until frothy. Gradually add the 1/3 cup sugar and continue beating until stiff peaks form.
  • Gently fold the whipped egg whites into the flour mixture, taking care not to deflate the airiness of the whites.
  • Pour the batter into a greased and parchment-lined cake pan, then bake for 30-40 minutes or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and let it cool completely.
  • Assembling the Cotton Soft Snow Cheesecake
  • Mix the softened butter and cream cheese in a large bowl until smooth.
  • Gradually add the condensed milk and whipping cream, mixing until well combined and fluffy.
  • Once the chiffon cake has cooled, Cut it in half horizontally and generously spread the snow frosting on top and around the sides of both halves and layer them together, creating a smooth layered frosted cake.
  • Sprinkle-grated cheddar cheese on top.
  • Refrigerate the cheesecake overnight to let the flavors meld together.
  • And there you have it! Your very own Cotton Soft Snow Cheesecake, ready to impress your friends and family with its melt-in-your-mouth texture and heavenly taste.
