Ingredients

  • Marinade
  • 650 grams 650 Pork Tenderloin (thinly sliced)

  • 1 1 Egg White

  • 2 tbsp 29.57 g Cornstarch

  • 1 tbsp 14.79 ml Water

  • 1 tbsp 14.79 ml Cooking Oil

  • 1/4 tsp 1.5 g Sea Salt

  • 1/4 tsp 0.5 g Ground Black Pepper

  • 2 tsp 8.4 g Sugar

  • Sauce
  • 250 grams 250 grams Onion Leeks (cut diagonally into ¼”-thick slices)

  • 2 1/2 tbsp 36.97 ml Light Soy Sauce

  • 1 1/2 tbsp 29.57 ml Oyster Sauce

  • 1 1/2 tbsp 22.18 ml Cooking Wine

  • 1 1/2 tbsp 18 g Sugar

  • 5 cloves 5 cloves Garlic (peeled and minced)

  • 1 tsp 4.93 ml Sesame Oil

  • Salt and Pepper to Taste

Directions

  • Trim off and discard any fat from the pork. Cut the pork into about 1/4-inch slices. Make thin strips out of those slices.
    Tip: Putting the pork in the freezer for about 20 minutes will make it easier to cut and trim.
  • Slice the pork and put it in a bowl. Mix the egg white, oil, cornstarch + water, sugar, salt and pepper together.
  • Mix everything together and coat all the pork. Cover and put in the fridge for 30 minutes or up to 8 hours.
  • Over medium-high heat, swirl some of the oil around in a wok or large nonstick skillet.
  • Add pork when the oil is hot and shimmering. Stir-fry for approx. 1 – 3 min., or just until no longer pink. Take out of the wok.
  • Heat the rest of the oil in the same wok and stir to coat. Stir-fry the leeks for about 3 minutes, or until they are almost soft.
  • Add the minced garlic and cook for about 30 seconds, or until the garlic smells good.
  • Mix in the cooking wine, soy sauce, oyster sauce, sugar, and some salt and pepper to taste. Add pork back to the wok. Reduce heat to medium and cook for about 1 to 2 minutes, or until sauce thickens.
  • Put out the fire. Add the sesame oil that has been toasted and serve with hot rice. Enjoy!
