Ingredients

  • 500 grams 500 grams Firm Tofu

  • 2 pcs 2 pcs Roasted Nori Sheets

  • 1/4 cup 32 g Cornstarch

  • 3 cloves 3 cloves Garlic (minced)

  • 1 stalk 1 stalk Onion Leeks (white part – chopped and thinly sliced), (green part – soaked in ice bath)

  • 3 tsp 6 g Sesame Seeds

  • 1/4 cup 59.15 ml Canola Oil (for frying)

  • Teriyaki Sauce
  • 4 tbsp 59.15 ml Soy Sauce

  • 4 tbsp 59.15 ml Sake

  • 4 tbsp 59.15 ml Mirin

  • 2 tbsp 24 g Sugar

  • 2 tbsp 29.57 ml Water

Directions

  • Mix the ingredients for the sauce and set them aside.
  • Then, pat the tofu dry with a towel. Cut into equal sticks.
  • Cut the nori sheet so it is shorter than the length of the tofu and big enough to wrap around.
  • Wrap each piece of tofu in nori and trim as needed.
  • Dredge each piece of tofu in the cornstarch, tapping to shake off any extra, so that all sides of the tofu have a light coating of starch.
  • Heat the oil in a nonstick pan or seasoned skillet over medium-high heat.
  • Place the tofu in a single layer and fry, flipping once, until both sides are golden brown, about 4 minutes per side.
  • Place on a cooling rack or plate with a paper towel. Set aside.
  • In the same pan, heat the rest of the oil over medium-low heat. Add the garlic and white parts of the onion and leek, and cook for 1 minute, until until fragrant
  • Pour the teriyaki sauce in and turn the heat down to low.
  • Add the pieces of fried tofu. Leave it to cook for another 2–3 minutes, until the sauce gets thicker and the tofu soaks up some of the sauce.
    Add the sesame seeds and stir.
  • Turn off the heat. Garnish with leeks (green part).
    Eat hot over steamed rice.
