Ingredients

  • 2 large 2 large Tomato

  • 1 medium 1 medium White Onion (finely chopped)

  • 2 tbsp 12 g Spring Onion (finely chopped)

  • 3 cups 709.76 ml Vegetable Stock

  • 2 tsp 12 g Salt

  • 2 large 2 large Eggs (beaten)

  • 3 tbsp 44.36 ml Slurry (starch + water)

Directions

  • In a soup pot or wok, heat the oil over medium-low heat.
  • Saute onion for 1 minute.
  • Stir-fry the tomato for 5 minutes, until it softens and starts to fall apart.
  • Then pour in the vegetable stock and simmer. Then, stir the soup to form a vortex. Pour the egg into the center of the vortex and stir it quickly to make the lacy egg.
  • Add salt to taste.
  • Mix cornstarch and water in a small bowl to make a cornstarch slurry. Then, pour the slurry into the soup. As you pour in the slurry, keep swirling the pan until it is well mixed in.
  • Once the soup starts to get thick and shiny, add the chopped spring onions and stir.
  • Serve hot. Enjoy!
