  • 600 grams 600 grams Pork Shoulder (cut into small cubes)

  • 150 grams 150 grams Pork Liver (cut into small cubes)

  • Soy Sauce and Calamansi Juice (for marination)

  • 1 large 1 large Potato (cut into small cubes)

  • 1 medium 1 medium Carrot (cut into small cubes)

  • 1 small 1 small Green Bell Pepper (chopped)

  • 1 medium 1 medium Red Onion (minced)

  • 4 cloves 4 cloves Garlic (minced)

  • 50 grams 50 grams Garbanzos

  • 2 tbsp 30 g Raisins

  • 1 pc 1 pc Hotdog (sliced)

  • 200 grams 200 grams Tomato Sauce

  • 2 tbsp 32 g Tomato Paste

  • 1/2 cup 118.29 ml Water

  • 1 pc 1 pc Dried Bayleaf

  • 1 tbsp 14.79 ml Olive Oil

  • Salt and Pepper to taste

Directions

  • Start by marinating the pork and liver in soy sauce and calamansi juice for at least one hour.
  • In a large pan, heat the olive oil sauté liver until tender, remove from pan and set aside.
  • In the same pan, sauté the onion and garlic until fragrant.
  • Add the marinated pork, bay leaf, salt, and pepper. Add water and let it simmer for about 15 minutes or until the meat is tender.
  • Stir in the tomato sauce and paste, followed by the potato and carrot. Simmer for an additional 5 minutes.
  • Lastly, add the cooked liver and all remaining ingredients and simmer for another 2 minutes or until the vegetables are tender.
  • And voila, your Pork Menudo is ready to be served!
